Moroccan Meatballs with a Shredded Carrot Salad

You're in for a treat! This recipe is so simple and quick. At the moment, it's my favorite recipe using my Moroccan blend. I love making this for a crowd because it's something different than normal. I've tested this recipe on many friends and family. I'm delighted to say it has since become a house favorite. This dish looks impressive (like it takes a lot of time and effort), but in reality it only uses a few ingredients and about 30 minutes of time! Let's dive right in!


Moroccan Meatballs with a Shredded Carrot Salad

Serves 4


Meatball Ingredients:

1 lb ground lamb

2 tbsp fresh parsley, chopped

1/2 onion, diced

1 1/2 tbsp Nourished Roots Moroccan Blend

1/2 tsp Nourished Roots Tri-Salt Blend


Sauce Ingredients:

1 tbsp olive oil

1/2 onion, diced

2 14.5-oz cans fire roasted tomatoes

1/2 cup veggie broth

1/2 tsp Nourished Roots Tri-Salt Blend

2 tbsp Nourished Roots Moroccan Blend


Simple Shredded Carrot Salad Ingredients:

3 cups shredded carrots

3 tbsp fresh parsley, chopped

3 lemon wedges

1 tbsp olive oil

1/2 tsp Nourished Roots Tri-Salt Blend


Directions:

  1. In a bowl, combine all of the meatball ingredients and mix well to combine. Form into 12 golf ball sized meatballs and set aside.

  2. Heat the olive oil in a pot over medium-high heat, sauté the onions for 3 minutes or until they soften. Add in the meatballs gently and sear on each side until browned but not fully cooked through.

  3. Add in the fire roasted tomatoes, veggie broth, salt and Moroccan spice and stir. Bring to a boil, reduce to a simmer and simmer uncovered for 10 minutes, or until meatballs have reached an internal temperature of 160 degrees F.

  4. While the meatballs are cooking, assemble the salad by tossing the carrots in a bowl with parsley, lemon juice, olive oil and salt.

  5. Serve meatballs with rice or cous cous. Enjoy!
