I'm a big fan of one pan meals. The less clean-up the better! This recipe is so easy and so flavorful! I can almost guarantee it will be in your weekly rotation once you try it!
One Pan Chicken Teriyaki
makes 3 servings
1 cup soy sauce
1/3 cup water
1 tbsp minced garlic
2 tbsp corn starch
1/2 cup honey
3 chicken breasts
1 cup snap peas
1 cup broccoli, cut into florets
1 red bell pepper, sliced
1 cup baby carrots
1 cup jasmine rice, dried
Preheat oven to 400 degrees F and line a pan with foil. Prepare rice according to package directions.
Over medium heat, combine soy sauce, water, minced garlic, corn starch and honey in a sauce pot. Whisk until combined. Stir occasionally until mixture starts to bubble. The mixture will thicken quickly. Once the mixture starts to bubble, stir constantly until the texture resembles the thickness of honey. Remove from heat.
Place veggies and chicken on a pan. Spoon sauce over veggies and toss to combine. Spoon sauce onto chicken and spread on both sides. Bake for 25 minutes or until chicken reaches an internal temperature of 165 degrees F. Top with additional sauce, if desired. Serve with jasmine rice. Enjoy!
